STEP BY STEP

Let's make something delicious.

  1. 01

Put the amaranth, water, cinnamon stick and lemon zest in a saucepan and bring to the boil. Reduce the heat and simmer for 30 minutes. Remove from the heat and leave to stand for 10 minutes. Stir in the agave syrup and leave to cool completely.

  2. 02

Fold the quark into the amaranth and divide the cream between bowls.

  3. 03

Hull and wash the strawberries, then drain well. Finely purée a third of the strawberries with the lime juice and press through a sieve into a small saucepan. Add the sugar and bring briefly to the boil. Cut the remaining strawberries into pieces, add them to the pan and simmer for 1–2 minutes. Finally, stir in the strawberry liqueur (Erdbeer-Limes) and leave to cool.

  4. 04

Spoon the strawberries over the amaranth and quark cream and serve.
