STEP BY STEP

Let's make something delicious.

  1. 01

For the curry, wash the aubergines and beef tomatoes and cut into large cubes. Heat a little rapeseed oil in a large saucepan. Briefly fry the aubergine and tomato cubes in the hot oil.

  2. 02

Peel and finely dice the onion and garlic. Peel the ginger and cut into fine strips. Add the onion, garlic and ginger to the saucepan and sweat for 2-3 minutes until translucent.

  3. 03

Stir in the dried coriander, caraway seeds, turmeric, chilli flakes and garam masala. Then deglaze the fried vegetables with the chopped tomatoes.

  4. 04

Cook the basmati rice according to the packet instructions. Tear the fresh coriander into rough pieces, wash and pat dry with kitchen paper.

  5. 05

Spoon the aubergine curry over the rice and garnish with coriander before serving.
