This baklava combines crisp layers of filo pastry, chopped pistachios and a honey and lemon syrup. Serve the sweet pastry with coffee or as a dessert after a savoury meal.
STEP BY STEP
Preheat the oven to 180 °C with top and bottom heat.
Melt the butter in a saucepan over a low heat and add the cinnamon. Cut the filo pastry into circles using a springform tin as a guide. Line the springform tin with a layer of baking paper and brush with butter. Set aside 2 tbsp of the chopped pistachios.
Place the first 2–3 sheets of filo pastry in the springform tin, brush with the butter and cinnamon mixture and sprinkle with 2 tbsp of the chopped pistachios.
Add another sheet of pastry, brush again with the butter and cinnamon mixture and sprinkle with pistachios. Repeat until all the pistachios have been used. The filo offcuts can be incorporated into the layers.
Once all the pistachios have been used, brush the remaining filo pastry with the butter and cinnamon mixture and stack the sheets on top of one another.
Use a sharp kitchen knife to score a decorative pattern into the baklava. Bake in the oven for approx. 30 minutes until golden brown.
Once the baklava has finished baking, mix 150 ml water with the honey and lemon juice, bring to the boil and pour over the still-hot baklava. Leave the baklava to stand for approx. 30–60 minutes to allow the syrup to soak in. Sprinkle decoratively with the reserved pistachios and serve with hot tea or Turkish coffee.
