STEP BY STEP

Let's make something delicious.

  1. 01

Sift the flour into a bowl and mix with the salt, sugar and vanilla sugar. Dissolve the yeast in the lukewarm milk. Combine with the egg, melted butter and flour mixture, then knead to form a smooth, supple dough. Finely dice the cranberries and knead them into the dough. Shape the dough into a ball and place in a bowl. Cover with a cloth and leave to rise in a warm, draught-free place for 30–40 minutes, until doubled in volume.

  2. 02

Knead the dough again. Divide into 12 portions of approximately 60 g each and shape into balls. Place slightly apart on a baking tray lined with baking parchment. Cover and leave to rise for another 25 minutes, until noticeably increased in volume.

  3. 03

Score a cross into the top of each dough ball with a very sharp knife. Whisk the egg yolk with the milk and brush over the tops.

  4. 04

Bake in a preheated oven at 200 °C conventional (180 °C fan) for 20–25 minutes.

  5. 05

Remove from the oven and leave to cool on a wire rack.
