STEP BY STEP

Let's make something delicious.

  1. 01

Preheat the oven to 175 °C fan. Grease the cake tin with oil.

  2. 02

Beat the eggs and sugar until light and foamy. Mix the flour and baking powder, then fold into the egg mixture with a spatula. Bake on the middle shelf of the preheated oven for 15 minutes, until the surface is golden.

  3. 03

Heat 200 ml orange juice. Mix the remaining 100 ml orange juice with the vanilla custard powder.

  4. 04

Peel and purée the persimmon. Halve the passion fruits and strain the juice through a sieve to remove the seeds.

  5. 05

Stir the juice and custard powder mixture into the boiling orange juice and allow to thicken.

  6. 06

Stir in the persimmon purée and half the passion fruit juice. Stir the mixture regularly as it cools.

  7. 07

Cut the remaining fruit into small cubes (0.5–1 cm) and fold into the cooled custard mixture.

  8. 08

Spread the sponge base with 2 tbsp apricot fruit spread, then spread the filling over it. Refrigerate overnight.

  9. 09

Mix the cream cheese with the remaining passion fruit juice and apricot fruit spread. Spread over the cake in waves just before serving.
