STEP BY STEP

Let's make something delicious.

  1. 01

For the date caramel layer, blend the dates with 60 ml water in a blender until smooth. Add the peanut butter and continue blending until you have a smooth caramel mixture.

  2. 02

Stir the peanuts into the date caramel mixture and transfer to a baking tin (20 x 20 cm) lined with baking parchment. Smooth the surface and place in the freezer for 15 minutes.

  3. 03

Meanwhile, prepare the cream layer. Split the vanilla pod lengthways and scrape out the seeds. Whisk the aquafaba and vanilla seeds with an electric hand mixer until a milky-white cream forms. Gradually sprinkle in the icing sugar, xanthan gum and salt, continuing to whisk until the mixture is glossy and white. Finally, stir in the peanut butter.

  4. 04

Spread the cream over the chilled date caramel layer and place in the freezer for 2 hours.

  5. 05

For the coating, chop the vegan dark chocolate. Melt it together with the peanut butter in a bowl over a hot water bath.

  6. 06

Remove the baking tin from the freezer, lift out the frozen mixture and cut into 12 bars. Dip each bar into the melted chocolate coating, let the excess drip off and place on baking parchment. Leave the coating to set.

  7. 07

Keep the vegan chocolate peanut bars in the fridge and sprinkle with a little salt before serving.
