STEP BY STEP

Let's make something delicious.

  1. 01

Peel the pineapple, remove the core and roughly dice the flesh. Place the pineapple pieces, coconut milk, icing sugar and vanilla extract in a tall mixing jug and blend with a hand blender until creamy. Freeze in an ice cream maker for about 50 minutes.

  2. 02

Meanwhile, peel the bananas and mash with a fork. Peel and finely chop the ginger. Rinse the lemon under hot water, pat dry, finely grate the zest and squeeze out the juice.

  3. 03

Once the ice cream has finished freezing, whip the vegan cream with the vanilla sugar using the whisk attachments of an electric hand mixer until stiff. Whisk together the mashed bananas, ginger, lemon zest and lemon juice, then fold into the whipped cream.

  4. 04

Use an ice cream scoop to form scoops and arrange in bowls with the banana and ginger cream. Garnish with fresh mint and serve.
