STEP BY STEP

Let's make something delicious.

  1. 01

Boil the purple potatoes and baby potatoes in salted water for about 25 minutes, until cooked through. Meanwhile, peel and finely dice the shallots. Snip the garden cress and set aside in a bowl.

  2. 02

Drain the cooked potatoes and leave to cool. Once cool, cut into slices.

  3. 03

Place the bacon on a baking tray and bake at 180 °C fan for 4–5 minutes.

  4. 04

Meanwhile, put the oil, shallots and potato slices in a frying pan and fry until golden brown. Transfer to kitchen paper to drain.

  5. 05

Grease ovenproof preserving jars with butter and layer the potato slices inside until the jars are about ¾ full.

  6. 06

Crack the eggs into a bowl and season generously with salt and pepper. Pour the egg mixture over the potatoes in the jars. Bake without lids at 160 °C fan for 10 minutes, until the egg is set.

  7. 07

Garnish the finished farmer’s breakfast with the bacon rashers and garden cress.
