Couscous consists of small semolina granules and is widely used in North African cooking. This salad combines it with peppers, sheep’s milk cheese and fresh herbs.
STEP BY STEP
Prepare the couscous with the vegetable stock according to the packet instructions.
Wash the peppers, halve and deseed them, then cut into small dice.
Wash the spring onion and slice into thin rings. Peel the onion and garlic and finely dice both.
Wash the parsley, pat dry with kitchen paper and finely chop.
Crumble the sheep’s milk cheese and place in a bowl with the vegetables. Season with salt, pepper, coriander and lemon juice.
Add the vinegar and oil, then fold in the couscous.
Wash the basil, pat dry with kitchen paper and use to garnish the salad at the end.
