STEP BY STEP

Let's make something delicious.

  1. 01

Peel and finely dice the shallot, garlic and ginger. Wash, trim and finely chop the chilli.

  2. 02

Heat the coconut oil in a saucepan. Gently sauté the shallot, garlic, ginger and chilli without browning. Add the spices and sauté for about 3 minutes, stirring.

  3. 03

Stir in the lentils, deglaze with the vegetable stock and add the tomatoes. Cover and simmer over a low heat for 15 to 20 minutes, until the lentils are soft.

  4. 04

Pour in the coconut milk and stir in the peanut butter. Season with salt, pepper and lime juice. Simmer for about 5 more minutes, then taste and adjust the seasoning.

  5. 05

Rinse the coriander, pat dry and pick off the leaves. Divide the curried lentils between plates, garnish with coriander and grind over the pepper. Serve with steamed basmati rice and flatbread.
