STEP BY STEP

Let's make something delicious.

  1. 01

Remove the prawns from their shells and finely chop with a knife or in a food processor. Peel and finely chop the ginger. Wash the spring onions, remove the roots and slice into thin rings. Fold the ginger, spring onions and chilli flakes into the chopped prawns.

  2. 02

Wash the lime in hot water, grate off a little zest, then halve the lime. Mix the soy sauce, sesame oil, fish sauce and sugar with the lime zest and juice. Briefly toast the sesame seeds on all sides in a non-stick frying pan without adding any fat.

  3. 03

Lay the wonton wrappers side by side on a floured work surface. Put one teaspoon of prawn filling in the centre of each wrapper. Brush the outer edges with water. Fold the four corners up towards the centre and press firmly together to seal into a pouch.

  4. 04

Place the dim sum in a steamer lined with baking paper and steam for 6–10 minutes. Serve the cooked dim sum with the sesame sauce and chopped coriander.
