STEP BY STEP

Let's make something delicious.

  1. 01

Toast the sunflower and pumpkin seeds in a dry frying pan. Mix the vinegar, mustard and 4 tbsp oil, then season with salt and pepper. Dice the shallot and stir it in. Wash the lamb’s lettuce and spin dry.

  2. 02

Halve the mushrooms lengthways and coat in the starch. Beat the eggs. Dip the mushrooms into the beaten eggs, let the excess drip off, then coat in the breadcrumbs.

  3. 03

Heat the remaining oil in a non-stick frying pan. Fry the mushrooms in batches until golden and crisp. Drain on kitchen paper and season with salt.

  4. 04

Toss the lamb’s lettuce with the dressing and arrange on plates with the mushrooms. Serve with the lemon wedges.
