STEP BY STEP

Let's make something delicious.

  1. 01

Wash the rabbit, pat dry and cut into 8 pieces.

  2. 02

Peel and roughly dice the onions. Peel and finely chop the garlic cloves.

  3. 03

Heat the oil in a casserole dish. Sear the rabbit pieces until well browned on all sides. Add the onions and garlic and fry alongside the rabbit. Season with salt, pepper, cinnamon and allspice, then deglaze with the stock.

  4. 04

Add the tomatoes with their juice and the bay leaves. Bring to the boil, then reduce the heat, cover and braise for 40 minutes. Check the seasoning again.

  5. 05

Peel and wash the potatoes, then halve or quarter them depending on their size. Cover and cook in boiling salted water for approx. 20 minutes.

  6. 06

Wash the parsley, pat dry and remove the stalks. Finely slice the leaves. Drain the potatoes.

  7. 07

Plate the rabbit with the potatoes, sprinkle with parsley and serve.
