STEP BY STEP

Let's make something delicious.

  1. 01

Place the beer, 150 ml water and the lentils in a bowl and leave to soak for 2 hours.

  2. 02

Peel the onion, then trim and wash the leek. Peel the carrot, celeriac and potatoes. Finely dice the onion, cut the leek into thin rings, slice the carrot, cut the celeriac into small cubes and cut the potatoes into roughly 1.5 cm cubes.

  3. 03

Place the smoked, cured pork neck and thyme in a suitably large saucepan, cover with the vegetable stock and slowly bring to the boil. Add the lentils along with their soaking liquid, season with salt and pepper and simmer for 30 minutes. Add a little more stock if needed.

  4. 04

Remove the pork and set aside. Add the prepared vegetables and simmer for a further 20 minutes.

  5. 05

Cut the pork into roughly 1 cm cubes and slice the sausages. Add both to the lentils and heat through. Taste and adjust the seasoning.

  6. 06

Dish up the lentil stew and serve.
