STEP BY STEP

Let's make something delicious.

  1. 01

Peel the carrots and onions. Cut the carrots into pieces and dice the onions. Peel and finely chop the ginger. Halve the chilli, remove the membranes and seeds, then finely chop.

  2. 02

Heat the oil in a saucepan and sauté the carrots, onions, ginger and chilli for about 3 minutes. Add the butter and curry powder and sauté for about 2 minutes more. Pour in the vegetable stock and coconut milk, reserving a little coconut milk. Season with salt and pepper and simmer over a medium heat for 10-15 minutes.

  3. 03

Meanwhile, trim or peel the kohlrabi and cut into 1 cm cubes.

  4. 04

Blend the soup until smooth with a hand blender. If desired, pass it through a sieve and return it to the saucepan. Add the kohlrabi cubes and simmer for a further 8 minutes.

  5. 05

Adjust the seasoning if needed, then serve garnished with the remaining coconut milk and coriander leaves.
