STEP BY STEP

Let's make something delicious.

  1. 01

Peel the celeriac and carrots and cut into 2 cm cubes. Wash the leek and cut into rings. Peel and finely chop the onion and garlic. Rinse the lentils under cold water in a sieve and leave to drain.

  2. 02

Heat the olive oil in a large saucepan. Add the garlic and onion and sweat over a medium heat until translucent. Crush the cumin and coriander seeds in a mortar, add to the pan with the smoked paprika, cayenne pepper and tomato purée, and fry for one minute. Add the remaining vegetables and fry for 1–2 minutes. Add the lentils and deglaze with the vegetable stock. Simmer over a low heat for 20–25 minutes.

  3. 03

Add the frankfurters to the lentil stew and simmer for a further 5 minutes. Season to taste with the vinegar, sugar and salt. Wash the parsley, shake dry, pick off the leaves and finely chop.
