STEP BY STEP

Let's make something delicious.

  1. 01

Preheat the oven to 160 °C fan (180 °C conventional). Grease a baking tray.

  2. 02

Using an electric hand mixer, whisk the eggs and sugar until light and fluffy. Add the cream and continue whisking. Mix the flour and baking powder, then fold into the egg and sugar mixture until you have a smooth batter. Spread the batter evenly over the baking tray and bake on the middle shelf for approximately 20 minutes until golden. Remove from the oven and leave to cool.

  3. 03

Mix the vanilla custard powder and sugar, then stir in 100 ml milk until smooth. Bring the remaining milk to the boil in a saucepan, remove from the heat and stir in the custard powder mixture. Bring back to the boil, stirring constantly, until the custard thickens. Remove from the heat and leave to cool, stirring occasionally.

  4. 04

Spread the cooled custard evenly over the cooled sponge base and cover with a closely packed layer of butter biscuits.

  5. 05

Melt the coconut fat in a saucepan over a low heat. Add the cocoa powder and stir well. Spread the glaze evenly over the cake.

  6. 06

Chill the cake in the fridge for at least 2 hours. Cut into squares and serve.
