STEP BY STEP

Let's make something delicious.

  1. 01

Soak the chia seeds in the carrot juice for at least one hour. Rinse the lemon under hot water, grate the zest and squeeze out the juice.

  2. 02

Purée the banana and combine with the grated carrot, lemon juice and zest, and honey. Mix the coconut flour, amaranth, hazelnuts and grated chocolate, then combine with the banana mixture and soaked chia seeds.

  3. 03

Preheat the oven to 175 °C fan. Divide the batter between twelve muffin cases and bake on the middle shelf for about 30 minutes.

  4. 04

For the frosting, melt the coconut oil if necessary and leave to cool slightly. Mix with the cream cheese and vanilla sugar, then pipe or spoon onto the muffins. Chill the muffins for half an hour. Before serving, arrange the berries on the frosting and dust with coconut flour.
