STEP BY STEP

Let's make something delicious.

  1. 01

For the couscous, bring the orange juice to the boil in a saucepan. Season with salt and honey, then add the couscous. Remove the pan from the heat, cover and leave the couscous to absorb the liquid.

  2. 02

Peel the carrot and cut into strips. Blanch the peas, refresh in cold water and set aside. Grate the zest from the orange, then cut out the segments, collecting the juice.

  3. 03

Cut the wholemeal bread into cubes and place in a non-stick frying pan with the olive oil. Toast the bread cubes on all sides until golden brown. Stir the cooled couscous and spoon it into the glasses as the first layer.

  4. 04

Layer the prepared ingredients in the glasses one after another. Finish with the carrot strips and one basil leaf.

  5. 05

Mix the reserved orange juice with the vinegar and drizzle over the salad to finish.

  6. 06

This salad in a glass is also suitable for taking to work.
