STEP BY STEP

Let's make something delicious.

  1. 01

Trim and wash the chilli, then cut into thin rings. Finely chop the lemongrass and ginger. Pound the chilli, lemongrass, ginger, cinnamon, 3 cardamom pods, coriander seeds, turmeric and 1 tbsp oil into a paste using a pestle and mortar.

  2. 02

Cook the rice according to the packet instructions, adding 4 cardamom pods to cook with it.

  3. 03

Clean and rinse the prawns, then pat dry. Wash, trim and cut the vegetables into small pieces.

  4. 04

Heat 2 tbsp oil in a wok. Fry the prawns for about 4 minutes, turning them as they cook. Add the vegetables and fry for about 3 more minutes. Stir in the curry paste and fry briefly until lightly toasted. Add the coconut milk and simmer for about 5 minutes.

  5. 05

Season to taste with the fish sauce.

  6. 06

    Drain the rice thoroughly.

  7. 07

Serve the rice and curry in bowls.
