STEP BY STEP

Let's make something delicious.

  1. 01

Roughly dice the onion. Peel and roughly chop the garlic.

  2. 02

Warm the olive oil in a saucepan over a medium heat. Gently sauté the onion and garlic. After a few minutes, deglaze with the red wine and let it reduce briefly.

  3. 03

Meanwhile, wash the tomatoes, remove the cores and roughly dice them. Add to the saucepan with the onion, garlic and red wine. Stir in the tomato purée and stock, season with salt and pepper, and simmer the soup for 5–10 minutes.

  4. 04

Blend the soup until smooth, then simmer for a few more minutes.

  5. 05

While the soup simmers, cut the bread into cubes for the croutons. Warm the olive oil in a frying pan. Toast the garlic and bread cubes together until the bread cubes are golden brown. Season with salt.

  6. 06

Serve the soup with the croutons and basil.
