STEP BY STEP

Let's make something delicious.

  1. 01

Put the bulgur in a bowl and pour over an equal quantity of boiling water (for 350 g bulgur, use 350 ml water). Stir, cover and leave to soak for 20–25 minutes.

  2. 02

Meanwhile, trim and wash the spring onions, then slice into very fine rings. Remove the stem core from the tomato, wash and dice very finely. Halve and deseed the peppers, wash and dice very finely too. Wash the parsley, shake dry and finely chop, reserving a few leaves for the garnish. Peel and finely dice the garlic. Put everything in a bowl, add the remaining çiğköfte ingredients and knead together. Leave in the fridge for about 1 hour.

  3. 03

Wash the lettuce, shake dry and separate the leaves. Set out a bowl of water and wet your hands. To create the typical çiğköfte shape, form 1 tbsp of the mixture at a time into a small log in one hand. Squeeze to leave visible finger marks. Wet your hands again after shaping each çiğköfte. Arrange the vegan çiğköfte in lettuce leaves.

  4. 04

Cut the lemon lengthways into wedges. Serve the vegan çiğköfte with the lemon wedges and pomegranate syrup. Garnish with the reserved parsley.
