STEP BY STEP

Let's make something delicious.

  1. 01

Clean the artichokes, remove the outer leaves and stems, and score the stem bases several times. Cook in a large saucepan with plenty of boiling water for 5–10 minutes until tender.

  2. 02

Wash the radicchio and chicory, cut into strips and arrange on a serving platter. Rinse the lime under hot water, grate the zest and squeeze out the juice. Whisk the lime juice and zest, olive oil, vinegar, honey and mustard together to make a dressing. Make several cuts in the ciabatta and spread with butter.

  3. 03

Remove the artichokes from the water, leave to cool and cut in half. Fry in a non-stick frying pan with a little rapeseed oil. Add the ciabatta to the pan and toast alongside the artichokes.

  4. 04

Toss the still-warm artichokes with the dressing, season with salt and pepper, and scatter a little fresh mint over the top. Serve the artichoke salad with the toasted ciabatta. Grate a little Parmesan over the salad if desired.
