Kirschmichel – German Cherry Bread Pudding
per serving

Homemade wholemeal spelt dumplings filled with vegetables and prawns, pan-fried until crisp underneath and sprinkled with dark sesame seeds. Served with vegetables in a soy sauce and rice vinegar sauce.
STEP BY STEP
Take 4 tbsp from 1/8 litre of ice-cold water (when preparing for 2 people) and knead with half the flour and salt to form a crumbly dough. Bring the remaining water to the boil and knead vigorously with the second half of the flour. Knead both portions of dough together for 5 minutes, then leave to rest for 30 minutes. Lightly toast the sesame seeds in a dry frying pan.
Cut the broccoli into 1 cm florets and finely dice the stalks. Cut the carrot into matchsticks. Thinly slice the mushrooms and cut the peppers into thin strips.
Cut the prawns into 0.5 cm pieces, removing the tails. Finely chop the garlic and ginger. Thoroughly mix all the filling ingredients and season to taste with pepper and sugar.
Roll out the dough on a floured work surface to approximately 3 mm thick and cut out circles 10 cm in diameter. Brush a ½ cm border around the edges with water. Place 1 tbsp of filling in the centre of each dough circle, cover with a second circle and press the edges firmly together. Make all the dumplings in this way and leave to dry slightly for 5 minutes. Set the remaining vegetables aside.
Bring salted water to the boil. Heat 1 1/2 tbsp oil (when preparing for 2 people) in two large frying pans with lids; 1 drop of water should sizzle in the oil. Add the dumplings to the pans and fry for 1 minute. Pour in the salted water until it is approximately 1 cm deep in the pans. Boil the dumplings vigorously, uncovered, for 2 minutes. Reduce the heat, cover and simmer gently for a further 8 to 10 minutes, until all the liquid has been absorbed. Any leftover filling can be fried in a non-stick pan and served with the dumplings.
Remove the lids, sprinkle the sesame seeds over the dumplings and fry for approximately 2 to 3 minutes until crisp underneath.
For the sauce, finely chop the ginger, garlic and deseeded chilli. Mix with the remaining sauce ingredients and an additional 1 tbsp water (when preparing for 2 people). Add to the vegetables and allow the sauce to thicken briefly.
Finely slice the spring onion into rings and scatter over the dumplings.
