STEP BY STEP

Let's make something delicious.

  1. 01

Wash and trim the leeks, then cut into thin rings. Wash the peppers, remove the stalks and cores, then cut into bite-sized pieces. Wash and trim the aubergine, then cut into bite-sized pieces too. Wash the chilli, remove the stalk and seeds, then finely chop.

  2. 02

Sear the diced pork in the clarified butter in a saucepan over a high heat. Add the leeks and fry over a medium heat for 5 minutes. Add the remaining vegetables and tomato purée and fry for a further 5-7 minutes. Deglaze with the red wine.

  3. 03

Add the chopped tomatoes and bay leaf and simmer over a low heat for 45 minutes. Season with salt, pepper and hot paprika.

  4. 04

Divide the kavarma between bowls, garnish with parsley and serve with fresh white bread.
