STEP BY STEP

Let's make something delicious.

  1. 01

Bring the dashi stock to the boil.

  2. 02

Peel the garlic clove and crush it with the flat side of a large knife to release its flavour. Peel the ginger with a spoon. Add both to the dashi stock along with the pepper, cleaned mushrooms, sliced carrots and pak choi. Simmer for about 5 minutes.

  3. 03

Meanwhile, cook the ramen noodles in a second saucepan according to the packet instructions. Drain and divide between 4 soup bowls.

  4. 04

Peel and devein the king prawns. Add them to the stock and poach gently for about 3–4 minutes.

  5. 05

Remove the ginger and garlic from the stock, then pour the stock over the noodles. Season the soup with a little soy sauce to taste and garnish with a boiled egg, a few sesame seeds and finely chopped spring onions.
