STEP BY STEP

Let's make something delicious.

  1. 01

Peel and slice the beetroot, then spread on a baking tray with olive oil. Roast in the oven at 180 °C for 25–30 minutes.

  2. 02

Meanwhile, prepare the salad: finely chop the onion and fry in a large frying pan with olive oil over a medium heat.

  3. 03

Add the couscous and vegetable stock. After about 2 minutes, remove from the heat and leave to stand, covered, for a few minutes.

  4. 04

Finely dice the roasted beetroot and add to the couscous along with the beetroot juice. Stir well and season with salt and pepper. Squeeze the lemon and stir in the lemon juice. Dice the feta, segment the orange and finely chop the parsley. Slice the spring onions into rings.

  5. 05

Arrange the couscous on a plate and top with the feta, orange segments, spring onions and parsley.
