STEP BY STEP

Let's make something delicious.

  1. 01

Parboil the sweet potatoes in salted water for approx. 15 minutes, then leave to cool on a wire rack. Peel and halve crosswise, then use a melon baller or a sharp spoon to scoop out a hollow 2 cm deep in each half.

  2. 02

Meanwhile, cut the chorizo into 1 cm cubes, finely chop the chillies and finely grate the zest of the lemon. Fill the sweet potatoes with the chorizo, lemon zest and chilli.

  3. 03

Cover the filling with marshmallows, then wrap each sweet potato half in a slice of bacon.

  4. 04

Place the filled sweet potatoes on the barbecue and cook until the bacon is crisp and the marshmallows are caramelised.
