STEP BY STEP

Let's make something delicious.

  1. 01

Wash and roughly chop the wild garlic, then place in a tall blending jug with the olive oil and 220 ml water. Purée until smooth with a hand blender.

  2. 02

Place the flour, eggs and salt in a bowl. Add the wild garlic mixture and beat with the whisk attachments of a hand mixer until bubbles form in the batter. Once the batter is smooth and thick, leave it to rest for about 20 minutes.

  3. 03

Bring a pan of salted water to the boil. Working in batches, pass the batter through a spaetzle maker or press into the hot water. Once the spaetzle float to the surface, lift them out with a slotted spoon and rinse under cold water. Drain well.

  4. 04

Chop the walnuts. Melt the butter in a saucepan over a medium heat. Add the walnuts and stir them in. Allow the butter to brown lightly, then remove the pan from the heat. Finely shave the Parmesan.

  5. 05

Plate the wild garlic spaetzle with the walnut butter and Parmesan, then serve.
