STEP BY STEP

Let's make something delicious.

  1. 01

Rinse the quinoa and cook according to the packet instructions.

  2. 02

Preheat the oven to 180 °C. Drain the chickpeas, rinse briefly and leave to drain. Mix in a bowl with 1 tsp salt and 1 tsp chilli flakes. Spread on a baking tray lined with baking paper and roast in the oven for 20–25 minutes.

  3. 03

Peel and grate the beetroot and carrots. Cut the tofu into cubes. Remove the avocado flesh from the skin and cut into slices. Finely shred the red cabbage. Wash the herbs, shake dry and pick off the leaves. Roughly chop the peanuts.

  4. 04

Mix all the dressing ingredients together thoroughly. Use a little more or less honey or lime juice to taste.

  5. 05

Place the quinoa in a medium-sized bowl or a deep plate. Arrange the remaining salad ingredients in small groups next to each other on top. Sprinkle over the peanuts, then finish with the dressing.
