STEP BY STEP

Let's make something delicious.

  1. 01

Trim the leeks, pat dry and cut into thin rings. Peel and finely chop the onion and garlic. Wash the chives, shake dry, finely snip and set aside.

  2. 02

Heat the oil in a large saucepan. Brown the mince and onion well. Season with a little salt and pepper.

  3. 03

Add the leeks and garlic and fry briefly. Deglaze with the vegetable stock, bring everything to the boil and simmer for about 10 minutes.

  4. 04

Stir in the processed cheese and crème fraîche. Season with nutmeg, pepper and a little more salt if needed.

  5. 05

Ladle the cheese, leek and mince soup into deep plates or bowls and garnish with chives. Fresh, hearty farmhouse bread or warm baguette from the oven goes well with it.
