STEP BY STEP

Let's make something delicious.

  1. 01

Cook the beetroot in simmering salted water for about 15 min to make it easier to peel.

  2. 02

Peel the beetroot and cut into cubes.

  3. 03

Peel the carrots and sweet potato and cut them into cubes too. Peel and finely dice the shallot and garlic.

  4. 04

Prepare the apple last, as it oxidises quickly: quarter it, remove the core and cut into cubes.

  5. 05

Heat the oil in a roasting tin on the hob. Sweat the shallot and garlic first. Add the remaining cubed vegetables and the apple, sweat for about 3 min, then deglaze with the white wine. Season with honey, thyme, salt and pepper. Cook in a preheated oven at 175 °C fan for about 25 min.

  6. 06

Meanwhile, clean, acidulate and salt the salmon (the 3-step rule). Sear skin-side down in a hot frying pan, then turn and finish cooking on the other side (about 3 min on both sides, depending on the thickness of the fish).

  7. 07

Then place the salmon in the oven with the vegetables for about 5 min. Arrange on a plate and drizzle with lemon juice.
