STEP BY STEP

Let's make something delicious.

  1. 01

Cook the pasta according to the packet instructions and drain. Meanwhile, trim, wash and halve the beans. Cook in salted water for 5–6 minutes, then drain.

  2. 02

Trim the spring onions and cut into rings. Wash and halve the tomatoes and remove the stalk ends. Drain the artichoke hearts, halve them and dry on kitchen paper. Heat 2 tbsp olive oil in a large frying pan and fry the artichokes cut-side down until browned. Turn them over, then remove from the pan. Add a further 2 tbsp oil to the pan drippings and fry the vegan meat substitute strips until golden brown. Remove these from the pan too.

  3. 03

Slice the garlic and fry it with the spring onion rings and beans in the remaining oil. Add the tomatoes, season everything with salt and pepper and let the tomatoes release some of their juices.

  4. 04

Add the cooked penne, fold through and heat. Add the artichokes and vegan meat substitute and adjust the seasoning. Garnish with sage or deep-fried sage if you like.
