STEP BY STEP

Let's make something delicious.

  1. 01

Heat a little fat in a large, shallow frying pan.

  2. 02

Place one wheat tortilla in the pan and top with grated cheese. Finely dice the red pepper and scatter 2 tbsp of it over the cheese along with 2 tbsp sweetcorn. Place a second wheat tortilla on top and fry over a medium heat for 1–2 minutes.

  3. 03

Once the cheese starts to melt, turn the tortillas over.

  4. 04

When both sides are golden brown, remove the quesadilla from the pan and cut it into 6 wedges on a wooden board using a pizza cutter. Repeat until all the wheat tortillas have been made into quesadillas.

  5. 05

For the guacamole, halve the avocados and remove the stones. Scoop out the flesh with a spoon and roughly mash with a fork. Finely dice the shallots and tomato. Finely chop the coriander and crush the garlic clove. Mix everything in a bowl and season with salt, pepper, chilli, olive oil and lime juice. Serve the guacamole as a dip with the quesadillas.

  6. 06

For the pico de gallo, finely dice the tomatoes and shallots and finely chop the coriander. Season with salt and pepper and serve as a dip with the quesadillas.
