STEP BY STEP

Let's make something delicious.

  1. 01

For the pork knuckles, peel and roughly dice the carrots, celeriac and onion. Heat the oil in a large pot. Brown the pork knuckles all over over a high heat for 2–3 minutes, then remove. Fry the onion in the same pot over a medium heat for 3–4 minutes. Add the carrots and celeriac and fry for a further 4–5 minutes. Add the pork knuckles, beer, bay leaf, caraway and thyme. Add enough water to cover the pork knuckles. Bring to the boil, reduce the heat and simmer with the lid on for 2 hours.

  2. 02

Preheat the oven to 200 °C, conventional top and bottom heat.

  3. 03

Remove the pork knuckles from the pot and reserve the cooking stock. Score the rind in a criss-cross pattern with a sharp knife. Season the pork knuckles with salt and pepper and place in a roasting tin with the bones pointing upwards. Roast on the middle shelf of the oven for 60 minutes, basting regularly with a little cooking stock. They should be browned all over with crisp crackling.

  4. 04

Meanwhile, prepare the vegetables for the sauce, peeling where needed, and dice them. Heat the oil in a saucepan. Fry the carrot and celeriac over a medium-high heat for 3 minutes. Add the leek and onion and fry for a further 3 minutes. Pour in the beer and 400 ml of the pork knuckle cooking stock. Bring to the boil, then simmer gently over a low heat for 50 minutes.

  5. 05

Meanwhile, prepare the sauerkraut. Melt the lard in a saucepan. Peel and halve the onion, cut into strips and gently fry in the hot lard. Add the sauerkraut and cook for a further 10 minutes, stirring constantly. Pour in the white wine and 100 ml water and simmer for 10 minutes. Season with salt, pepper and a little caraway if desired. Cover and keep warm.

  6. 06

Strain the beer sauce through a fine sieve. Mix the starch with 2 tbsp cold water until smooth, then stir into the boiling sauce. Simmer for a further 3 minutes. Season with salt and pepper. Prepare the potato dumplings according to the packet instructions.

  7. 07

Serve the pork knuckles with the potato dumplings, sauerkraut and beer sauce.
