STEP BY STEP

Let's make something delicious.

  1. 01

Clean the mushrooms and cut into thin slices. Finely dice the shallots. Slice the spring onions into rings, setting the green parts aside.

  2. 02

Fry the mushrooms, diced shallots and spring onion rings in the oil over a medium heat for three to four minutes, tossing the pan constantly. Stir together the vegetable stock and soured cream, then add to the mushroom mixture.

  3. 03

Place the baking dish in the oven and preheat to 180°C (conventional top and bottom heat). Cut the cheese into cubes half a centimetre across and add to the mushroom mixture with the finely chopped parsley. Season with salt and pepper. Mix everything with the spätzle, then taste and adjust the seasoning.

  4. 04

Transfer the spätzle and mushroom mixture to the baking dish. Bake on the middle shelf of the oven for 15 minutes, until the cheese has melted. Serve sprinkled with the reserved spring onion greens.
