STEP BY STEP

Let's make something delicious.

  1. 01

For the sauce, put 300 ml water, the sake, soy sauce, mirin, sugar and dashi stock in a saucepan and bring to the boil, stirring regularly. Simmer over a medium heat for 5 minutes. Remove from the heat and leave to cool.

  2. 02

Cook the udon noodles in plenty of boiling water according to the packet instructions. Drain, rinse under cold water and leave to drain in a sieve.

  3. 03

Wash the spring onions and cut diagonally into bite-sized pieces. Peel and finely chop the garlic. Peel and finely dice the ginger. Wash and peel the carrots, then cut into thin strips. Wash the white cabbage leaves, pat dry with kitchen paper and cut into thin strips. Clean and halve the shiitake mushrooms. Cut the pork into bite-sized pieces.

  4. 04

Heat the groundnut oil in a wok or deep frying pan. Add the pork and fry until browned on all sides. Add the vegetables and stir-fry for 5–6 minutes, turning regularly. Finally, add the udon noodles and fold through. Pour in the mentsuyu sauce to deglaze the pan and toss briefly.
