STEP BY STEP

Let's make something delicious.

  1. 01

Wash the courgettes, trim the ends and coarsely grate or cut into very thin slices. Peel the garlic and crush through a garlic press. Wash the basil, pat dry and finely slice half the leaves.

  2. 02

Preheat the oven to 200 °C conventional (180 °C fan).

  3. 03

Bake the courgette frittata on the middle shelf for about 20 minutes until set. Garnish with basil leaves and serve.

  4. 04

Whisk the eggs and cream together. Season with salt, pepper and thyme. Heat the olive oil in an ovenproof frying pan. Sweat the garlic until translucent. Add the courgettes and fry for 3–4 minutes, turning regularly. Pour the egg mixture evenly into the pan. Dot spoonfuls of ricotta over the top. Finely grate the Parmesan and scatter it over the egg mixture.
