STEP BY STEP

Let's make something delicious.

  1. 01

Cook the Maultaschen in plenty of hot water according to the packet instructions, drain and cut into quarters or three thick strips. Wash the spring onion, trim the ends and cut into rings. Clean the oyster mushrooms and cut into small pieces. Divide the broccoli into florets, wash and drain.

  2. 02

Bring a saucepan of salted water to the boil. Add the broccoli and cook at a rolling boil for 3-4 minutes. Lift out with a slotted spoon and plunge into ice-cold water.

  3. 03

Heat 2 tbsp clarified butter in a non-stick frying pan. Add the Maultaschen and fry for 2 minutes on each side until golden brown. Add 1 tbsp clarified butter. Add the broccoli, oyster mushrooms and spring onion to the pan, cover and fry over a medium heat for 5 minutes. Meanwhile, roughly chop the walnuts and toast in a frying pan without oil. Finely grate the Alpine cheese.

  4. 04

Season the Maultaschen and vegetables with salt and pepper, sprinkle with the toasted walnuts and Alpine cheese, and serve.
